When nurseries farms say "it is too early to dig or..too late to dig".........?

"Too early" or "too late" to dig simply means that the plant has gone into dormancy (more or less) and will not be able to process and transport nutrients necessary for it to survive the dig and/or transplant. You generally want to dig or transplant when sap is flowing - mid spring to fall are the best times. Hope this helps.
